Meal Plan for Volunteers PDF Print E-mail

In the spirit of Radical Hospitality, our meal plan offers meals for diverse palates and dietary needs. Meals draw largely on low-carb recipes, using whole grain products and fresh local produce when possible. The goal is balanced meals that please the palette and the body drawing on many food traditions, especially those of Louisiana. What does the meal program include?

  • Breakfast items supplied everyday in a help-yourself-manner,
  • Packed sack lunches for 5 work days,
  • Sit down dinners in the volunteer dining room 5 nights, Sunday-Thursday (when groups are here for 7 nights).

In order to plan appropriate meals, each group should report the following information ahead of time:

  • # of vegans (no animal products at all)
  • # of ovo-lacto vegetarians (eat eggs and dairy products but no other animal products)
  • # of vegetarians who eat fish and seafood and eggs and dairy
  • # of omnivores who eat no red meat (poultry and fish ok)
  • # of omnivores who eat “anything”
  • # and specific descriptions of any food allergies or other important dietary information.

Available breakfast offerings will include items such as Bagels & Cream Cheese, Cold Cereal, Yogurt, Oatmeal, Eggs, Cheese, Toast, Juice, Milk & Soymilk, Tea & Coffee. Daily sack lunches to include:

  1. Fresh fruit and or veggies
  2. Sandwich, wrap or pasta salad
  3. Additional side item- dessert, chips, slaw or potato salad

Dinner is served by 6:30 pm unless otherwise arranged. Dinner clean up is responsibility of the volunteer group. Each week there will be at least one traditional New Orleans meal such as gumbo or etoufee, and the Sunday meal is the traditional New Orleans red beans and rice.
